By now, we are seeing pumpkins EVERYWHERE. Pumpkin spice lattes, pumpkin patches, PUMPKIN EVERYTHING! But did you know that there are LOADS of wonderful health benefits to the pumpkin itself. We think of pumpkin as a vegetable, but did you know it is actually more closely related to a fruit?
Here are some more amazing qualities of the wonderful pumpkin!
-It is loaded with Vitamin A and Vitamin C
-It contains lots of antioxidants, which can help your body fight against free radicals
-It is high in lutein and zeaxanthin, which can help improve eyesight
-It is high in fiber and low in calories, so it fills you up quickly and keeps you full longer
-It is incredibly versatile and easy to add into your diet- you can bake it, make it into soups, make dinners out of it, desserts with it, cook the seeds, the possibilities really are endless!
Of course, we want to make sure we aren’t loading it with sugar, and we want to be careful adding foods super rich in fiber to our diet if we haven’t been eating them recently. But, in the spirit of fall, I say- BRING ON THE PUMPKINS!
